Paleo Jalapeño "Cornbread" Muffins

Serves 4     adjust servings

Ingredients

  • 1/2 cup blanched almond flour
  • 1/2 cup tapioca flour
  • 2 eggs
  • 1 tablespoon butter, melted
  • 1/4 cup unsweetened apple sauce
  • 4 oz pickled jalapeños, chopped (more or less depending how hot you want them)
  • 1 teaspoon baking powder
  • pinch of salt

Instructions

  • Preheat oven to 400°.
  • Mix all ingredients together in a medium bowl just until combined with a whisk.
  • Grease a muffin pan with a little olive oil and divide mixture among 4 or 5 spaces.
  • Bake for 20 minutes or until tops are a nice golden brown and a toothpick comes out clean when inserted into the middle.
