This green chile chicken soup recipe is one I make often. It sort of resembles my Caldo de Pollo, but is made in the slow cooker. Which means that green chili soup takes no effort AT ALL and is ready whenever you are. Aren’t slow cookers the best?!
Many people will only eat soup in the cold winter months, but I make this green chile chicken soup recipe year round. My family loves it for a simple lunch or dinner. We have also been known to serve it when we have friends over for dinner. Making green chili chicken soup in a Crock Pot gives me time to make a paleo dessert for after.
This broth-based easy chicken green chili recipe is naturally low carb and paleo friendly, but the whole family will enjoy it even if they aren’t following a special diet. For fans of soup with bread, try my paleo jalapeno cornbread muffins to go with it. So good!

I bought my son a slow cooker thinking he could come home to a cooked meal, and he wouldn’t use it because he thought it was using up too much electricity and therefore costing him a lot. And he couldn’t make the gourmet meals he likes.
Can you persuade him otherwise?
This looks absolutely delicious! What a great healthy yet flavorful recipe 🙂
This soup was so delicious. I love that it’s made in the slow cooker….just makes life so much easier!
Thanks Kathy! I’m all for making life easier!
What a beautiful soup. And all my favorite flavors too. 🙂
Purging is so much fun! I am doing the KonMarie method and find it so freeing that I can get rid of so much stuff. I actually had 87 pairs of underwear:) Crazy! Keep purging!!! I am trying to declutter so I can focus more:) BTW, this soup looks amazing! I love one that I can dump and go and then enjoy later on with minimal effort and lots of flavor!
87 pairs of underwear?! Wow, my thing is spatulas, I have like a million and can only use one at a time. Totally loving throwing things away!
Mexican soups are so good this time of year. This is really fresh yet filling. I also love all of that green in there!
I do love to purge, but am not quite in the spring cleaning mindset yet, but good for you for getting such an early start. I am all about de-cluttering and easy slow cooker meals like this one!

I hear you re: clutter, Lauren! It’s hard to be clear of mind when your space is anything but! Your soup looks and sounds delicious. Do you use whole chicken breasts and shred them up after cooking, or do you cut them up before cooking?
Hey Jill! I shred it with a fork just before serving!
A big bowl of comfort food, well done!
The clutter in our house from Christmas is driving me nuts. It is all being put away ASAP. Easy soups like this that you dump everything in are exactly what I need to help reduce all the after holiday stress.
