- Check the color. It should be just barely opaque, but not totally white.
- Check the center of the salmon to see if it flakes – that means it’s done.
- Keep the skin on the maple mustard glazed salmon. The skin has lots of nutrients and makes the maple mustard glazed salmon crispy, but it also locks in moisture.
- Use a thermometer to check the temperature of the glazed salmon filet. It should reach 145 degrees F, but if you let it rest for 5 minutes, it comes up another 5 degrees, so you can cook it to 140 degrees F instead and let it rest.

Ingredients for the Salmon
- 12 ounces Salmon fillet
- 1 tablespoon Maple syrup
- 2 tablespoons Whole grain mustard
- Sea salt (to taste)

Directions for the salmon. Preheat oven to 425 degrees F.
- Season salmon with salt and pepper.
- Combine mustard and maple syrup in a small bowl then brush half over salmon.
- Heat a bit of coconut oil in a skillet over medium high heat.
Sear salmon flesh side down until a nice crust forms from the mustard (about 4-5 minutes).
