This paleo mug cake is an EASY paleo dessert that can be ready in just minutes thanks to the microwave! And did I mention chocolatey?! It’s a healthy dessert at its finest and I can’t stop making this almond flour mug cake recipe! Which proves yet again that mug cakes, and specifically this paleo chocolate mug cake, are the BEST. When a cake craving strikes, this paleo cake recipe comes to the rescue!

What Is A Mug Cake?

A mug cake is a cake dessert made in a coffee cup or mug. They are microwaved, so you don’t need to heat up your oven, and they can be made very quickly.

My paleo mug cake is gluten-free and full of healthy ingredients. 🙂

Paleo Chocolate Mug Cake Ingredients:

  • Ghee (we love the flavor, but you can also use coconut oil)
  • Almond flour (the flour base that’s also just a bit nutty)
  • Coconut sugar (or any paleo sugar replacement)
  • Raw cacao powder (antioxidants, yo!)
  • Chocolate chunks (an unsweetened bakers bar works great here)
  • Paleo baking powder (to make it rise)
  • Egg (makes it perfectly gooey)
  • Vanilla extract
  • Salt (never, NEVER make a dessert and not put a pinch of salt in it… trust me)

How To Make A Chocolate Mug Cake

I love this paleo cake recipe not just because it tastes amazing, but it is genuinely so easy to make. Look at these simple instructions for how to make paleo mug cake:

  • Place ingredients into the mug: ghee, almond flour, coconut sugar, cacao powder, baking powder, egg, vanilla and salt and mix well. Sprinkle with chocolate chunks.
  • Microwave for 1 minute. The center should wiggle slightly, and the outsides should be set. If needed, cook another 30 seconds.

Now you can grab a fork and indulge in this perfectly cooked paleo microwave mug cake!

Almond Flour Mug Cake Variations

Want to try some variations? Here are some ideas to add even more flavor to this paleo cake recipe:

  • Cayenne Pepper – I know it sounds a little crazy! But just add a dash of cayenne pepper to any of your chocolate easy paleo desserts for a surprising kick.
  • Coconut – If you are a coconut fanatic, then you really need to add in a couple of teaspoons of toasted coconut. I love the texture it gives this healthy mug cake!
  • Cinnamon – Once the gluten-free mug cake is finished cooking, give it a sprinkle of cinnamon. Yummy!
  • Nuts – Toss in a tablespoon of crushed nuts. Macadamia, walnuts, almonds, or hazelnuts are all perfect choices for this healthy chocolate mug cake.

What Is The Difference Between Cocoa And Cacao?

While cocoa and cacao look similar, they are actually different in many ways. It can be confusing to know which ingredient you should be using. I wanted to give you some information, so when you are making treats like my gluten-free chocolate mug cake, you don’t have to question which to use. Here are the main differences between the two:

  • Cocoa – This is raw cacao; however, it has been roasted at really high temperatures. This process reduces the content of enzymes and leads to lost nutrients.
  • Cacao – It’s also raw cacao, but the process is a little bit different. The beans aren’t roasted, and they are cold pressed. This allows the enzymes to continue living, and it also removes the fat content.

We’re using cacao in this recipe as it has extra antioxidants and enzymes, but cocoa can work in a pinch, too.

How Do You Store Paleo Chocolate Mug Cake?

If you do not eat all of this paleo cake recipe, don’t worry, you can save the leftovers. Simply place the almond flour mug cake in an airtight container. You can either put it in the refrigerator or leave it on the pantry and enjoy later.

It will only last a day or so before the ingredients begin to dry out. No preservatives in this paleo mug cake recipe!

Can You Freeze Almond Flour Mug Cake?

Yes, you can freeze paleo almond flour mug cake for up to a month. Warm the cake up by tossing it in the microwave and zapping it for 10-15 seconds. Don’t go too long, because you don’t want it to dry out.

One important thing to note is that to have the most flavorful and moist experience with this paleo cake recipe, you would be best to enjoy it right away when it’s fresh. If you do save it for later (because I know the ingredients can get pricey), just know that it may not be the same quality as it started out.

    Delicious! I splits it between my husband and myself. I have the Pampered Chef “ ceramic egg cooker”it’s got a vented lid so I did one min on high and 30 seconds at 70% with a little rest time. Perfectly done!

    I’m super excited to try this recipe! However, I don’t have a microwave. I do have oven safe mugs though, how long do you think it would take to bake this in the oven instead of the microwave?

      Hi Christina, Yes, absolutely! You can bake it in an oven safe mug, I’d estimate about 15 minutes at 350 degrees F.

    Is there a version of this that’s not chocolate? Or if I leave the cocoa and chocolate out of this recipe, will it change the cake in a bad way?

    First keto mug cake that was decent! Mine came out a bit dry even at 60 seconds but it had very good flavor. I added poured some heavy cream over it and it really hit the spot; I also added a tiny pinch of salt to the batter and used monk fruit as the sweetener because less carbs…. BTW, I halved the recipe, using one smallish egg and it made a very generous 1 mug cake. Thank you for a quick and enjoyable keto friendly dessert.
