This Paleo Cookie Dough Blizzard has a creamy chocolate almond butter ice cream paired with chunks of cookie dough mixed in.

Keto Cookie Dough Blizzard

What’s better than cookie dough, I mean really? This recipe for a PaleoCookie Dough Blizzard uses a variation of my Paleo Edible Cookie Dough, with just two simple swaps:

  • switch out honey for coconut sugar
  • leave out the tapioca starch

You can also make a keto version by using Swerve instead of coconut sugar, and confectioner’s Swerve instead of maple syrup.

When I was brainstorming for another paleo dessert recipe that uses cookie dough my mind immediately went to a blizzard or ice cream treat.

So off I went to whip up a chocolate ice cream base (it’s so creamy!) that didn’t need an ice cream maker and that would come out creamy instead of icy. That’s where the almond butter steps in. This ice cream is soft and just about perfect.

I chose to freeze the cookie dough then crumble it before adding to the ice cream but you could also swirl it in too, that would be delicious!

Cookie Dough

  • 1/4 cup blanched almond flour
  • 2 tablespoons ghee
  • 2 tablespoons coconut sugar
  • 1 teaspoon vanilla extract
  • Pinch sea salt
  • 2 tablespoons unsweetened chocolate chunks
  • 1 tablespoon unsweetened almond milk

Chocolate Ice Cream

  • 1 cup coconut cream
  • 1/4 cup honey
  • 1/4 cup almond butter
  • 1/4 cup full-fat coconut milk
  • 2 tablespoons cacao powder

Cookie Dough

  1. In a small bowl mix together all of the cookie dough ingredients until combined. Place a piece of parchment paper onto a plate then spread out the cookie dough onto the paper, freeze 20 minutes until solid. Cut into bite sized pieces and store in an airtight container until ready to use.

Chocolate Ice Cream

  1. In a blender combine the coconut chocolate ice cream ingredients, blend until smooth. Pour into a freezer safe container with a lid. Stir every 30 minutes until frozen to the consistency of a very thick milkshake.

  2. To serve top the ice cream with the crumbled cookie dough.

    Is there a substitute for the coconut sugar and coconut cream? I’m allergic to coconut.

    Can you use the honey instead of the Swerve in both parts of the recipe, if not concerned about making the Keto version? I don’t have any Swerve and not even sure what it is.
