Fall is just around the corner and while I’m yearning for yards filled with brightly colored crunchy leaves, farmers markets filled with pumpkins and gourds, and cooler weather I’m savoring the last few days of summer eating all of the cantaloupe, blackberries, and coconut I can get my hands on.
Even if I can get coconut 365 days a year it’s not the same when you’re sipping a Coconut Gin and Tonic while there’s snow on the ground. No, these are best when it’s a sweltering 90+ outside. Cold, sweet, and a bit tangy these gin and tonics are a step up from the classic version. Be sure to use a quality tonic, Fever Tree is my fave and a quality gin of course. Hendricks or Tanqueray is usually my go to.

- 3 ounces coconut water
- 2 ounces tonic water
- 2 ounces gin
- 1 ounce fresh lime juice
- Fill a glass with ice and pour in the coconut water, gin, and lime. Carefully top with the tonic water so you keep those bubbles. Garnish with a slice or twist of lime.
