If you have a bit of a fondness for all things sweet like I do, these paleo almond butter cups are for you. There may not be such a thing as paleo peanut butter cups, but I promise these dark chocolate almond butter cups are just as delicious. They are one of my favorite almond butter desserts! Keep ’em stashed in your freezer to stop those sweet cravings in their tracks.

As a little girl, I used to love peanut butter cups and can almost taste them just thinking about them. This almond butter dessert is a no-compromise paleo peanut butter cups alternative. It is super fast to make, requires just 4 natural ingredients and is the perfect portion-controlled sweet treat! So many wins all around! You can even make them into keto almond butter cups with the right sweetener.

You will love these, I promise.

Can You Make Paleo Peanut Butter Cups?

Peanuts are unfortunately not suitable for a paleo diet, because they are legumes.

Almond butter, however, is a great alternative. The taste is gentle and nutty and naturally sweet. These paleo and keto almond butter cups use unsweetened almond butter instead of peanut butter and are sweetened with natural, unrefined sweetener.

These little cups are perfect for portion control. One cup is the perfect sweet mouthful and as you make them ahead and store them in the freezer, they’re ready and waiting at any time!

Are Paleo Almond Butter Cups Easy To Make?

Yes, these are probably one of the easiest almond butter desserts (or any dessert, for that matter) that you will ever make.

This almond butter cup recipe recipe just involves some melting, stirring and freezing. No fancy ingredients, no complicated processes and the prep time is under 10 minutes!

How To Make Dark Chocolate Almond Butter Cups

To make these beautiful almond butter desserts, simply melt the dark chocolate with coconut oil and the maple syrup, or alternative sweetener.

I melt my ingredients in a microwave in 30 second bursts. If you prefer to melt the ingredients on the stove, simply do it in in a bowl over a pan of simmering water (this is called a double boiler).

Once the mixture has melted, stir it to ensure that all the ingredients are fully combined. Spoon a couple tablespoons of mixture into each cup. Place your almond butter cups in the freezer for around five minutes to set.

Now comes the center! Spoon 1/8th of the almond butter into each cup and spread evenly.

TIP: If you prefer these paleo almond butter cups to be sweeter, you can stir some sweetener into the almond butter before spreading it on. I didn’t sweeten the inside of them, as I don’t think it’s needed.

Finally, divide the remaining melted chocolate mixture between the cups and place them in the freezer to set fully.

TIP: To make these easy, use either parchment or silicone muffin liners – that way once they freeze the wrapper still comes off easily. You can pop those into a muffin tin or if they are thick enough to hold their shape once filled, you can simply place them on a baking sheet like I’ve done here.

When you’re ready to eat them, remove them from the freezer and allow them time come to room temperature before eating.

These almond butter cups also taste amazing frozen – like a keto almond butter cup popsicle!

How To Make Almond Butter Cups With Different Sweeteners

While the almond butter and dark chocolate already sweeten these keto almond butter cups lightly, you likely want a bit more to make them taste like paleo peanut butter cups.

To get the normal level of sweetness you want from a dark chocolate almond butter cup, you have a choice of natural unrefined sugar options to choose from:

  • honey
  • maple syrup
  • agave nectar
  • coconut sugar
  • powdered erythritol

My kids love the added kick of flavor you get from adding maple syrup to these almond butter desserts, but powdered erythritol is my favorite low carb option and I use it the most. Some people are okay with it for a paleo lifestyle and some aren’t. Just choose the sweetener you like!

TIP: If you use a low carb sweetener, make sure it’s powdered (not granulated), otherwise it will be grainy. You can get away with granulated if you are using a sweetener that contains actual sugar (such as coconut sugar), because that dissolves more easily than low carb sweeteners.

How To Store Dark Chocolate Almond Butter Cups

For best results, store these paleo or keto almond butter cups in the freezer.

If you plan on eating your keto almond butter cups right away or very soon, you can keep them in the refrigerator.

However they will be really sticky and soft after a while, so if you want the texture and bite of a traditional peanut butter cup, then you really do need to freeze them.

  • 5 ounces Paleo dark chocolate
  • 1/3 cup Maple syrup (or sweetener of choice - see options in post above)
  • 1 tablespoon Coconut oil

  1. In a medium sized bowl, melt the chocolate, the sweetener, and the coconut oil together in the microwave in 30 second bursts, until smooth. (You can also use a double boiler on the stove.) Stir to combine.

  2. Place 1-2 tablespoons of the melted chocolate mixture into each cup, Freeze for 5 minutes, just until set.

  3. Top each cup of set chocolate mixture with 1/8th of the almond butter.

  4. Spoon the remaining chocolate equally over the top of the almond butter.

  5. Freeze until solid. Let a cup sit at room temperature for about 5 minutes before eating.
