Paleo Waffles Recipe (Almond Flour Waffles)

  • 1/2 cup Blanched almond flour
  • 3 tbsp Tapioca flour
  • 1/2 tsp Paleo baking powder
  • 1/4 tsp Sea salt
  • 1/4 cup Unsweetened almond milk (at room temperature)
  • 2 large Eggs (at room temperature)
  • 2 tbsp Maple syrup (or honey)
  • 2 tbsp Coconut oil (melted; plus more for greasing waffle iron)
  • 1/2 tsp Vanilla extract

  1. Preheat the waffle iron to high heat. Grease lightly with coconut oil.

  2. In a large bowl, combine almond flour, tapioca flour, baking powder, and salt. Set aside.

  3. Add the almond milk, eggs, maple syrup, melted coconut oil, and vanilla extract. Mix well, until smooth.

  4. Transfer half the batter (about 3/4 cup) into the lightly greased waffle iron. Close and cook until steam stops coming out, about 5 minutes. Remove the waffle and repeat with the remaining batter.
