Buffalo Chicken Meatballs

  • 1 pound ground chicken
  • 1 egg
  • 1/4 cup almond meal
  • 1/4 green pepper diced
  • 3 green onions thinly sliced
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon sea salt
  • 1/2 cup buffalo sauce
  • paleo ranch dressing for serving
  1. Preheat oven to 375° and line a baking sheet with parchment paper.
  2. Mix ground chicken with all ingredients except the buffalo sauce and ranch dressing.
  3. For mixture into balls and bake for 20 minutes. Toss with warmed buffalo sauce and serve with ranch dressing.

Recipe Notes

***If you can’t find ground chicken you can simply use a food processor or blender to finely mince the chicken.
***If packing for lunch these are delicious cold as well! There's no need to warm the buffalo sauce before tossing if this is the case.
