Spring is here and with it comes lazy weekend brunches that I have the PERFECT cocktail for! You’ll want to sip these cantaloupe bellinis all season long.
Cantaloupe is by far one of my favorite fruits. The sweet melon pairs well with a lot of different flavors but I especially love it in cocktails. Last year I posted my favorite cantaloupe margarita and this year I’m back with a fun fizzy cocktail. Who doesn’t love bubbles?!
Bellinis couldn’t be simpler to make as it’s just fruit juice or puree and prosecco! One of my favorite prosecco brands is VOVETI.

When making a bellini you can choose to use juice or puree. Juice will make a thinner drink of course but sometimes I like the thickness of a puree. It’s totally up to you!
I also make sure to garnish with a sprig of mint but you could use frozen pieces of melon. Just use a melon baller to scoop out small pieces, freeze, and then use as ice cubes! It keeps your prosecco cold and doesn’t dilute the flavor!
